
I'm sure there are more...but starting with 101 isn't bad for a cookbook. What stands out with this book is how simple the recipes really are. There aren't too many ingredients and everything seems easy for a novice to prepare. A lot of the basics are in here, but there are a few stand-out ones. I honestly never thought about using tofu to make hummus or making tofu creme brulee.
Tofu Hummus
14 oz firm tofu, drained
1 can garbanzo beans, drained and rinsed
1 clove garlic, chopped
1 tbsp. sesame oil
1/2 tsp. salt
2 tbsp. lemon juice
Blend all ingredients in a food processor or blender until smooth. Serve at room temperature or slightly chilled. Makes 6-8 servings.
