In The Kitchen With Kelly: Carrot Raisin Muffins


I've got half a bag of carrots and not enough hummus. One flip through Vegan with a Vengeance and I'm making muffins. The worst part of this is grating the carrots, which is messy and not blogger-wrist-friendly, but it does make you feel more involved in the process than tossing a bunch of ingredients in a bowl. The key is to soak the raisins in hot water for ten minutes to make them plump.

The smell of muffins? Absolutely worth your efforts. They're not too sweet, a bit spicy, and reminiscent of carrot cake. Start shredding now.

I'll have to try the Cap Muffin at Brew Ha Ha, but I think Metropolitan Bakery is way overrated and every time I've had their muffins I've taken maybe two bites. The muffins at Essene are the best, especially the chocolate chip oatmeal and the apple-strawberry, very moist with real fruit and whole grains. There used to be an amazing blueberry buttermilk muffin at E's Coffeeshop but they either run out or hide it when I'm there. Also dig on Canvas and Benna's.

Muffins are life and death. What are your favorite muffins in town? I just discovered the Cappucino muffin at Brew Ha Ha. God, it was so good. It reminds me of a Cap Muffin I used to get in Wisconsin and have not seen since. Other than that, the only reliable muffin source is whole foods. Old City Coffee has a nice walnut-apple thing. Sometimes I love it. Sometimes I don't. That french bread store in Manayunk and in Reading Terminal is just OK. Otherwise? Meh. I'll have Brew Ha-Ha's pumpkin muffin tomorrow, you betcha.
