Mean Green Curry

Being a curry-loving couple, we have learned to prepare a delicious curry in a short amount of time. We usually have the ingredients on hand and Josh is not shy when it comes to arriving from work with cans of coconut milk in his laptop bag.

Making curry does not translate to hours of slaving over a mass of spices and coaxing veggies into submission. Unless you insist on making your own curry paste, of course.

Our curry did not carry heat, but was still intricately spiced. The rich sauce gave in to the rice, turning it almost risotto-like in texture. This mean green curry is a generous lover.

Mean Green Curry

1 can of coconut milk
1 tbsp green curry paste
1 tsp soy sauce
1.5 tsp black pepper, ground
1 tsp cardamom seeds, ground
half a spanish onion chopped big
half a head of cauliflower
a few small potatoes
Cook the coconut milk, curry paste, soy sauce, and spices on medium for about 5 minutes. Stir. Add the veggies and cook for another 15, stirring occasionally. Serve over brown rice.

Serves 4.
