Mini Polenta Pizza Faces.

Sometimes you want pizza, but you don't have time to make dough.

Sometimes your adult reasons for polenta, but your stovetop is not feeling you.

There's no shame in keeping a roll of polenta around. And if there is, please shake your head at me and leave me some kind of disappointed look.

These Mini Polenta Pizza Faces will stare you down until you loosen up a little. Because I have devised a way to convince children to eat polenta and veggie pizza toppings in one shot. No children actually ate these, which is a shame, because that would be a nice piece of photo.

A situation in which food with a face is entirely acceptable...



With vegan parmesan sprinkled on top, the mini pizzas grew up a little and were ready for consumption.

To make your own polenta pizzas, simply slice a roll of polenta into thin rounds, spread with some tomato paste, add chopped veggies and fresh herbs, and bake at 375 degrees for 30 minutes.

I use the Galaxy brand. It's not bad.
