Skinny Tofu Saag.


 The Skinny Bitch Ultimate Everyday Cookbook is quickly becoming a staple book in our household. A dish I currently miss is saag paneer, and Tofu Saag with Brown Rice is the closest I may ever come to veganizing it. We added some homemade garam masala that we made a few months ago, which gave it that authentic snap, and by the time I came home from my Monday yoga, the vibrant, warming dish was waiting for me.

Would I do anything differently? I thought about it, and while I appreciate a softer tofu if it's flavored well, I might try a baked or seared tofu (or Fresh Tofu's Organic Baked Tofu if you want a shortcut) to give it a paneer-like texture. Josh begged to differ and thought the tofu was perfect. I like to experiment, so I'll try my improvisation, but this is a really great recipe as is.
