Eat Good Granola.

Store-bought granola and I don't mix so well - I find it laden with too much sugar and much of it is honeyed. Since I typically eat granola with soy yogurt (very sweet) or almond milk and bananas (also sweet), I want something that's more oat-y and nutty, instead of something that tastes like candy.

Plus, granola is one of those simple things that I know I should be making myself.

I went full-on granola control freak today and called on my entourage of loyal ingredients for a truly bitchy batch.

Bitches Eat Good Granola

1.5 cup rolled oats
2 tbsp shredded coconut
2 tbsp flaxmeal
2 tbsp sunflower seeds
1/3 cup chopped almonds
1/4 cup brown rice syrup
1 tbsp agave syrup
1 tbsp peanut butter
1 tbsp coconut oil
1 tsp cinnamon
1/2 tsp sea salt
dash of nutmeg
dried fruit, optional

Preheat oven to 325 degrees. Mix together dry ingredients. Combine wet ingredients and melt until warm, then drizzle over dry ingredients and stir until mixture clumps together. Spread on a baking sheet and bake for 40 minutes.

Makes 6-8 servings.

And the final word? This is expletive-worthy good.

Hey there,

Just wanted to let you know I made this granola today! It was so good...and brown rice syrup is definitely one of my favorite sweeteners ever. The only change I made was with the cooking time - I found that mine was done at around 25 minutes. Perhaps I have a hot stove! :)

Glad you liked it! It really is my favorite and I have experimented with the baking time. It does vary w the dried fruits and nuts.
