Hot Potato.



Pan-seared tofu night at Vedge Loft. I was craving mashed potatoes for a side. He was considering hash. We came up with this starchy compromise, and the only thing missing was the applesauce.

You could call these latkes, but they're more cake-like, not as flat. I like this style best...

Vegan Potato Pancakes

3 red potatoes, shredded
1 jalapeno, seeded, chopped
1/4 onion, chopped
1/2 cup panko breadcrumbs
2 tsp Vegenaise
Salt and pepper
Oil for frying

Combine all ingredients and shape into small round patties. Heat oil in skillet until sizzling, cook patties over medium high heat for 3 minutes on each side, or until slightly crisp and browned.

Makes 8.
