I don't know if you realize this, but I'm kind of a nut-tritionist. I'm naming my first child Cashew (Cash for short) and if it happens to be allergic to treenuts, well, I guess I'd have to switch to something allergen-free. It's good to know that all of Artisana's nut butters are peanut-free and manufactured in a peanut-free facility (perfect for school lunches). 100% organic, handcrafted in small batches, and with no sugar or preservatives, Artisana's butters are light years ahead of others with the variety that they offer and the quality.
The folks over at Artisana sent me a bunch of their raw butters for sampling - Coconut Butter, Cacao Bliss, Cashini, Tahini Butter, Cashew Butter, Almond Butter, Macadamia Butter, Pecan Butter, and Walnut Butter. They also make Coconut Oil. While technically not a butter, I love to bake with it - it is a tad more expensive to use than canola oil, but worth it for the boost in nutrition and the gooey richness that it adds to vegan scones and baked goods.
Now the challenge for me is to figure out how to use these butters. While I could simply use them in the ways that I normally enjoy my nut butter (for spreading or on cereal), I want to draw some inspiration from my readers. The hook-up is 1 jar of Cashini Butter, 1 jar of Walnut Butter, and a variety of single serving to-go packs to sample.
To enter to win, simply leave a comment below: Give me an out-of-the-ordinary nut butter recipe. The 3 that take the thinking outside of the jar will have their ideas test run in my kitchen. Best taste wins. To double your chances, tweet about the giveaway and let me know that you did so in the comments.
The contest begins today, September 27th and runs through Friday, October 1st at 12pm. I will announce the trio of finalists on Friday afternoon and the winner on Monday, October 4th. Good luck, my fellow health nuts.

Thanks for the heads up. I have a recipe to test and I'll be back with the winning recipe (haha).
Hi Kelly,
Josh just mentioned your giveaway and since i tried this simple, healthy and delicious recipie a few days back i wanted to share it with you:
Peanut butter and coconut balls:
1) 1 cup old fasioned oats
2) handful of roasted almonds
3) 1/2 cup creamy peanut butter
4) 1/2 cup honey
5) 1/2 cup unsweetened coconut
Grind the oats and almonds to a fine powder.
Mix the peanut butter and honey in a seperate bowl and add the powdered oats and almonds mixture.
Once mixed well make small balls and roll them in the coconut.
Variations: You could add some dark chocolate chips/ cocoa powder in while making the balls and coat with crushed cherios instead of coconut if you prefer:)

Kelly:
Try these made with Cashini Butter; I know you love chickpeas :)
I can also see using the Cashini to make hummus; tahini can be kind of strong and it can ruin hummus; but the cashini is almost definitely tamer.
Ok ok I need to get to thinkin'! And try to beat Eric.
The Cashini is a bit on the savory side, so those both could work!
Raw edamame hummus using the raw cashew butter, garlic, lemon, extra virgin olive oil, coriander, cumin, salt, pepper.
Peanut/pecan power-shake :) using the pecan butter, hemp milk, almond milk, hemp oil, peanut flour, vanilla sun warrior, some chopped pecans, and a bit of ice.
Cashini Butter Cookies:
1 c ww pastry flour (white flour would work)
1 t baking powder
1/2 t baking soda
2 T raw sugar
1/3 c cashini butter (in the past i mixed tahini and cashew butter)
1/2 c maple syrup OR agave
1 t vanilla
3 T melted coconut oil
2 T sesame seeds (black/white mixture, just not toasted)
Preheat oven to 350. Line a baking sheet with a slipmat or parchment paper and set aside.
Mix all dry ingredients (flour, baking powder, baking soda, sugar, salt and sesame seeds) together in a medium large bowl)
In a separate bowl combine your cashini, liquid sweetener, vanilla and coconut oil.
Add the wet mixture to the dry mixture and combine well.
Use a tablespoon to make cookies that are equal in size; you should end up with a dozen. Bake for 8 minutes; then cool.
Can I leave two different recipes? Yes? No? Who cares it's nut butter!
Walnut Butter Hummus
1/3 cup Walnut butter
1 garlic clove, quartered
1 14-ounce can chickpeas beans, drained
1/3 teaspoon orange zest
1/4 cup orange juice
salt to taste
pepper to taste
Stuffed French Toast
Take two slices of bread and smear nut butter between slices. I think Walnut, Pecan, or Macadamia would work great.
Coat your "nut butter sandwich" in a flax seed egg then place on a hot pan that is slightly oiled. Flip when slightly brown.
Finish your french toast off with a drizzle of Cacao Bliss.
well, good thing cashews don't come from trees then. :-p
htis is the only thing i have, it's a 5-ingredient PB cookie made with maple syrup. it's so good!!!
